Whats for Dinner?

So Monday while waiting for eternities for the nurse to finally call me back to see the doc i picked up a magazine called Cooking Light (or something like that) and while most recipes sounded like cardboard with dressing, or called for ingredients Gunnison Market could only dream of being big enough to carry (or maybe only I could dream Gunnison Market would carry, not sure which, but I am guessing more me wishing than them). I did find two recipes i would like to try....so i reached into my purse, to find no paper....miracles of miracles i did have a pen, but no paper....so what do you do...make due with the tiny 2 inch receipt they give you when they suck money out of you account.
I made these recipes last night and they were wonderful! So I am sharing them with the world!! :) I only had room to squeeze in the ingredients and amounts onto my minute piece of paper.....so no instructions and no titles...that part will be Marci created....enjoy!!

Perfect Pulled Pork
3 TBS Kastup
1 TBS Apple Cider Vinegar
1 TBS Mustard
1 TBS Molasses
3/4 tsp Chili Powder
1/2 tsp Cumin
1/4 tsp Ground Pepper
1/8 tsp Ginger
12 oz Chicken (cooked and shredded) I used pork, and it was splendid!
Mix all ingredients together and cook on med/low for about 30 min (this is what i did, i had leftover pork roast so i just shredded it and threw it in the sauce pan with all the ingredients, put it on med/low and ran to the thriving market to pick up a Mango...see next recipe. Makes about 3 or 4 sandwiches.

Scrumptious Mango Coleslaw

4 Cups Packaged Coleslaw mix with Carrots
1 C Mango
1/4 Red Onion ( i didn't put this in..Marci no likey buriny nose from raw onion)
Dressing:
1/4 C FF Mayo
1 TBS Apple Cider Vinegar
1 T Sugar
1/4 tsp Salt
Mix together and put on Slaw mixture...refrigerate for at least 15 minutes

Seven Months

I was trying to do this one or right around his turning of age, but December....well....its done thats all, and it was a whirlwind to get it there!! :)
As for Ky this last month he is just been even more darling, and more fun, and well just the joy of my life! He is now:
Rolling like a champ--i was worried he would never roll from his back to his belly, but belive me he has mastered this skill now, and now i have to watch him like a hawk!
He is jabbering TONS! His favorie is "dada" which he says mostly only when dada is home from work...smart kid or coincidence, i dont know, but it seems like he knows who dada is.
no he will not say "mama" even though he spends all day with me, i feed him, cloth him, play with him, change him, and well do it all....where is the appriciattion!! :) He also will say ba ba ba, and can make all sorts of sounds with his lips....all of which produce great amounts of slobber, and cause a wet shirt when he gets on those kicks!
He still loves being outside, and is going through great withdrawls that we cant go on long walks anymore. For a real treat, we will go sit on the front prorch and watch all the cars go by on Main Street....Pretty much his FAVORTE activities in the world!
He got a new carseat--a convertable kind, and lets just say that he loves it!! We travel SO SO much and he was goin out of his other one too quickly! He is lovin his new seat, and mom is loving it...that is till i have to wake him up to go into the market!
He will lean towards people he wants to go to now, and is finally raising his arms up to pick him up (everyonce in a while, we are still working on this)
He can fianlly sit up without getting so excited and flipping back...so now in the bathtub he can situp in it and holy cow he loves it!! The other day i tried to lay him back to i could wash his legs and he death gripped the sides of his tub to keep himself sitting up...i had to trick him to get him laying down and the entire time he was trying to do sit ups to get back to the sitting position! Funny boy!
Oh this has been a busy month for him! I think i might just have to keep adding to this post from time to time when i think of more things. I am just tired right now. and i know there is so much more to say.

The pictuers of him we got taken the first part of December for Christmas presents for Grandparents. The other little boy is our nephew Hueston.

Lovley.

The kitchen is semi-done! The rest is finishing touches…like installing the Over-the-range microwave, patching the ceiling where the wire came through to install it, putting a tile back splash on, and toe kicks, and molding on the top of the cabinets, and the two missing drawer fronts by the sink. NEVERTHELESS, it is live-in-able and is so beautiful! I am so happy to have it done! It took 2 ½ months to finish the kitchen and I think that made it all that more desirable and wonderful! J
We HATED the red, black and brown they had in there…it never put off that homey feeling that a home should. Besides that, the cabinets were OLD! They didn’t have runners on the drawers so they were always getting stuck, and I literally had to put all my strength in to open certain ones.
How blessed I am to have a husband that was willing to put in the hours he had to in addition to working so many hours at work (he is working around 50-60 hours a week at work). He did a great job and I am as happy as a meadowlark!

Santa Baby

Last night Santa visited our ward party, and i have wanted a picture of Ky and Santa since Thanksgiving, so i jumped on the opportunity. Me being a very prepared Mommy had my camera just in case, and we went to visit Ol Saint Nick. I handed Kyler over to Santa and he was ok at first, then got a little pouty lip, but never cried...what a brave little guy. I was curious as to how he would react, cause he is a friendly little boy...to everyone except those with facial hair...and Santa has ALOT! :) He tried to pull his beard, but Santa was too quick to and saved himself from being exposed.
Santa will be visiting another family party this year so hopefully i can get a picture with a smile for his "babys first Christmas" ornament i bought him this year!
HAPPY HOLIDAYS!!

Rollin, Rollin, Rollin

Kyler has refused to roll from his back to his belly up to this point. I knew he could he is just lazy i think. But as I was sitting here at the computer doing my morning checks online...i turned around to see why he was squaking so loud and he was off the blanket a good foot....i had put him in the middle!! He can do it! Miracles do happen! Now i cant say he is a lazy babe anymore! Happy happy day!
